Electronic conductivity is the reciprocal of resistivity and is used to indicate the conductance of a solution. To explain the effect of ionic concentration in the fermentation broth on the electronic conductivity, the ionic concentration during the alcoholic fermentation process was determined by measuring the concentrations of K+, Na+, Ca2+ and Mg2+ in the fermentation broth using Inductively Coupled Plasma Optical Emission Spectroscopy (ICP-OES) with an ICP-Optima 7000DV (Perkin Elmer, USA) system24. The instrument parameters are listed below (Table 2).
