FA composition in serum was analyzed between September 2013 and June 2014.

The total lipid content of the serum was extracted with solvents29,30. The methyl esters of the fatty acids in serum were prepared by saponification, and the serum compositions of FA were determined by gas-liquid chromatography (GLC) as described previously30. FA compositions were expressed as a percentage of total FAs in serum. Desaturase activity was estimated as the product-to-precursor ratio of FA composition in serum according to the following: SCD-1 = 16:1n−7/16:0, SCD-2 = 18:1n–9/18:0, D5D = 20:4n–6/20:3n–6, and D6D = 18:3n–6/18:2n–6.
