The procedure for anthocyanin extraction was conducted following a previously published method [24]. High-performance liquid chromatography (HPLC) analysis was performed with a Waters Alliance 2695 system (Waters Corp., Milford, MA, USA), utilizing a reverse-phase C18 column (4.6 × 250 mm, 5 μm; YMC Co., Ltd., Kyoto, Japan). The absorption at 520 nm was recorded and the quantification of anthocyanin was accomplished by comparing with authentic standard C3G.
