The color of dried mangosteen pericarp was measured in triplicate using the method of Raja et al. [25] by a spectrophotometer (ColorFlex, Hunter Lab, Reston, VA, USA) in terms of CIE L*, a*, and b* values. L* denotes the lightness of the sample ranging from 0 (black) to 100 (white), a* indicates greenness (−) or redness (+), and b* represents blueness (−) and yellowness (+).
