The droplet size of the emulsions was determined using an LA-950 laser scattering particle analyzer (Horiba Co., Ltd., Kyoto, Japan). Distilled water was used as the dispersant. Approximately 50–500 µL of each emulsion was added to the instrument and the droplet size distribution was expressed as per the following Equation (1):
where D43 is the average emulsion size, zi is the number of droplets of diameter Di. Each sample was determined twice, and the average was taken.
