Viability was assessed according to the national standard GB 4789.35-2016 and previously reported methods [46] with slight modifications. The fermented juice was evenly mixed, and 0.6 mL was added to 5.4 mL of pure water, followed by serial 10-fold dilutions. Fifty microlitres of each dilution were then spread onto the MRS agar medium, followed by incubation at 37 °C for 48 h. The cell counts were expressed as log10 CFU/mL.
