For the defatting of soy flour, a SC-CO2 extraction system (Ilshin Autoclave Co. Ltd., Daejeon, Republic of Korea) was used. The system consists of an extraction vessel, a separation vessel, a high-pressure pump, and a CO2 storage tank. An amount of 500 g of soybean flour was added to the extraction vessel and connected to the extractor. The extraction was conducted at 45 °C and 40 MPa for 10 h with a CO2 flow rate of 30 g/min, after which the supercritical CO2 was separated into gaseous CO2 and oil through a micrometer valve in the separation vessel [20]. The defatted soybean flour was kept at −18 °C for experimental use.
