To prepare 5% or 10% pectin solutions, the respective amount of pectin (w/v) was solubilized in either H2O at RT for 4 h under continuous stirring or in Fruktozym® or Frutase® solution (1:30 in H2O (v/v)) for 0.5, 4 or 16 h at 40 °C under continuous stirring, as indicated in the respective figure legend.
