The ethanol yield was calculated based on the ratio between the maximum ethanol concentration achieved during fermentation and the total initial sugar concentration. A theoretical maximum ethanol yield of 0.51 per unit of sugar (g/g) was used to calculate the percent theoretical yield (Y %T) [17] (Eq. 1).
