The bright-field, POM, and fluorescence microscopy images were taken on an optical microscope (Olympus BX51) in the transmission mode. The diameters of the droplets and the pitch of the Ch phase in the droplets were measured using the software ImageJ. The Z-stack fluorescence images of the Ch-CNC droplets loaded with FITC-labeled latex NPs were taken by a Zeiss LSM 710 confocal microscope. The dimensions of the NP assemblies were characterized by measuring their geometric mean diameter, which was calculated by measuring two orthogonal diameters, and finding the square root of their product.
