The analysis of WHC by using a UK CT15RT desktop high-speed refrigerated centrifuge was conducted based on the technique suggested by Liang et al. [63] with minor variations. Gel fragments of 2 mm thickness (2–3 g) were precisely balanced (W1) and infolded in three films of filter paper. Each sample was filed in a 50 mL centrifuge tube at (25 °C), centrifugated at 8000× g for 10 min, and then balanced again (W2) without filter paper. The WHC of the sample was computed using the following formula, and parallel tests were conducted in triplicate.
